N.1 First Week of Harvest EVOO

There is a moment each year when the olive grove seems to hold its breath.
A brief, fragile interval between night and day, when olives are still firm with chlorophyll and the air carries the scent of green fruit before it becomes oil.

This is where N.1 First Week Early Harvest Extra Virgin Olive Oil is born.

N.1 is more than a name.
It is the first pulse of the season captured at the very beginning of the harvest, when the olives are at their most vibrant and expressive.


The First Week of Harvest

The first week of olive harvest is never generous.

The olives yield very little oil, yet what they give is extraordinary. They are harvested at dawn while still cool, preserving their freshness and natural antioxidants.

At the mill, the first crates arrive in near silence. The air fills with intense green aromas as the olives are crushed within hours of picking.

The resulting early harvest extra virgin olive oil is unlike anything else: intensely green, vibrant, structured, and full of life.


A Symphony, Not a Season

On the label of N.1, a gramophone plays, releasing flavour instead of sound.

This oil is composed like music:

  • rhythm in its peppery finish

  • cadence in its elegant bitterness

  • harmony in its green herbal notes

And like music, it changes every year. Each harvest brings a different composition shaped by climate, soil, and time.


Exceptional Polyphenol Content

Laboratory analysis from the 2025 harvest revealed:

  • Total polyphenols: 494 mg/kg

  • Hydroxytyrosol and derivatives: 9.9 mg per 20 g of olive oil

These values qualify N.1 for the European Health Claim (EU Regulation 432/2012), which states that:

“Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.”

The beneficial effect is obtained with a daily intake of 20 g of olive oil.

This remarkable concentration of phenolic compounds is a signature of first-week early harvest olive oil.


A Jewel Made With Restraint

Harvesting this early is an act of discipline.

It means accepting lower yield in exchange for higher quality, stronger flavour, and greater nutritional value.

Production is intentionally limited:
only 1,500 bottles of 250 mL each year.

Every bottle contains the concentrated character of the earliest olives of the season.


The Taste of First Light

To taste N.1 is to experience the first breath of the harvest season.

Notes of:

  • green tomato

  • wild chicory

  • green almond

  • freshly cut grass

The peppery finish rises slowly, bright and clean, leaving a long and elegant persistence.
