Harvesting at the Perfect Moment
We pick our olives while they’re still green during the very first stage of ripening, to capture their full aromatic and phenolic potential.
This early harvest is key to the bold flavour, freshness, and complexity that defines our extra virgin olive oil.
We harvest our olives from late September to the beginning of November, when the fruit is at its peak and the land is at its most vibrant. This careful harvest ensures our premium extra virgin olive oil captures the true essence of Calabria’s terroir and Italian excellence.

Within Six Hours of Harvesting
To protect the integrity of our olives, we cold-extract our oil within six hours of harvesting.
Our mill, located just minutes from the groves, uses advanced, water-free technology for a process that’s as eco-conscious as it is effective.
This results in a purer, greener, and more expressive oil.

Preserving the Flavour
Once extracted, our extra virgin olive oil is gently filtered to remove sediment enhancing clarity and extending shelf life.
It’s stored in sterilised stainless steel tanks, sealed with inert nitrogen to prevent oxidation, and kept at a controlled temperature in our on-site lab.
We bottle only what we grow ensuring purity, traceability, and the unmistakable taste of Tenute Cristiano.
