Properly storing extra virgin olive oil (EVOO) is essential to preserve its aroma, flavour, and antioxidant richness. Although olive oil is a natural product with remarkable stability, it is more delicate than many people realize.

Understanding how light, heat, and oxygen affect olive oil makes it easy to keep your extra virgin olive oil fresh and expressive for longer.


Keep Extra Virgin Olive Oil Away from Light

Light is one of the main enemies of olive oil freshness. Exposure to light accelerates oxidation and gradually weakens the oil’s aromas and flavour.

Dark glass bottles help protect the oil, but proper storage is equally important. Always keep extra virgin olive oil in a shaded place, away from windows, bright countertops, or open shelves exposed to sunlight.


Avoid Heat

High temperatures can damage the delicate aromatic compounds in extra virgin olive oil and reduce its stability.

Olive oil prefers a cool and stable environment. Ideally, it should be stored between 14°C and 18°C.

Avoid storing the bottle:

  • near the stove

  • above the oven

  • close to radiators or heating sources

  • in areas exposed to direct sunlight

A cool pantry or kitchen cabinet is usually the best place to store olive oil.


Limit Exposure to Air

Oxygen gradually reduces the freshness of extra virgin olive oil once the bottle is opened.

To slow this process:

  • keep the bottle tightly closed after each use

  • avoid leaving the bottle open unnecessarily

  • choose bottle sizes that match how quickly you consume the oil

If you buy large tins of olive oil, it is often best to decant part of the oil into smaller bottles to minimize exposure to air.


Use Olive Oil Within a Few Months After Opening

After opening a bottle, the oil slowly begins to lose some of its aromatic intensity and antioxidants.

For the best sensory experience, it is recommended to consume extra virgin olive oil within three to four months after opening.

Freshness is one of the greatest qualities of premium EVOO, and using it regularly ensures that its flavour remains vibrant and expressive.


Should You Store Olive Oil in the Refrigerator?

Refrigeration is generally not recommended for storing extra virgin olive oil.

Low temperatures can cause the oil to form crystals or become cloudy. While this does not damage the oil, it affects texture and requires time for the oil to return to its natural state.

A cool, dark pantry is usually the ideal environment for storing olive oil.
