Carolea is smooth and rounded, with aromas of green olive fruit, ripe tomato, and wild herbs. On the palate: almond, fresh nuts, and green pepper, finishing with a soft note of tropical fruit.

Carolea is a premium single-varietal extra virgin olive oil, crafted exclusively from Carolea olives grown on our estate in Giardino Renda, in the heart of Calabria.

Some of our olive trees are centuries old and are part of the Presidio Slow Food Olivi Secolari, protecting traditional, sustainable, and high-quality agriculture.

Harvested in mid-October at optimal ripeness, the olives are processed immediately using cold extraction within six hours, then carefully filtered to preserve purity, freshness, and full organoleptic integrity.

Each bottle captures the essence of its land—respect for nature’s rhythm and the authenticity of time-honoured craftsmanship.
